		<description>Hey Libby - There are so many amazing meat subs out there aside from tofu! You might want to be careful with soy, anyway - too much can be troublesome, esp. for kids.  

Seitan, made from wheat gluten, is my favorite hands down.  Brands like Celebration make all sorts of roasts, sausages, and even cold cuts using seitan and grains.  

I think the real key to cutting back meat isn&#039;t subbing it out, anyway...more like relearning what a meal is like?</description>

My wife and I volunteer every year for the Chesapeake Watershed Clean Up. Last year we pulled 15 lawn bags of plastic bottles and bags out of a quarter mile stream bed, in addition to a car hood and some chain link fence.

I agree with you on Beef...we try not to over consume it either. I would say that I eat some type of beef twice a month. Much better than the everyday beefeater I used to be.
